Ingredients

  • Carrot - 1 medium, julienned
  • Snap peas - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 2 teaspoons
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons (for frying)
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)

Steps

  1. In a bowl, combine sliced chicken with cornstarch, salt, and black pepper. Mix well and let it marinate for about 10 minutes.
  2. While the chicken is marinating, prepare the vegetables: slice the bell pepper, julienne the carrot, and cut the broccoli into small florets.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
  5. Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas to the skillet. Stir-fry for about 3-5 minutes until the vegetables are tender yet crisp.
  6. Return the cooked chicken to the skillet with the vegetables. Pour in the gluten-free soy sauce and sesame oil, stirring everything together to combine. Cook for an additional 2 minutes to heat through.
