Ingredients
- Chicken breast - 300 grams, sliced into thin strips
- Bell pepper (red or yellow) - 1 medium, sliced
- Broccoli florets - 100 grams
- Carrot - 1 medium, julienned
- Snap peas - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 2 teaspoons
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons (for frying)
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
Steps
- In a bowl, combine sliced chicken with cornstarch, salt, and black pepper. Mix well and let it marinate for about 10 minutes.
- While the chicken is marinating, prepare the vegetables: slice the bell pepper, julienne the carrot, and cut the broccoli into small florets.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
- Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas to the skillet. Stir-fry for about 3-5 minutes until the vegetables are tender yet crisp.
- Return the cooked chicken to the skillet with the vegetables. Pour in the gluten-free soy sauce and sesame oil, stirring everything together to combine. Cook for an additional 2 minutes to heat through.
- Taste and adjust seasoning with extra salt or pepper if needed. Remove from heat and garnish with chopped green onions before serving.
