Ingredients
- Chicken breast - 300 grams, sliced
- Gluten-free soy sauce - 3 tablespoons
- Cornstarch - 4 tablespoons
- Egg - 1, beaten
- Vegetable oil - 100 ml, for frying
- Jasmine rice - 150 grams
- Water - 300 ml, for cooking rice
- Bell pepper - 1, sliced
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- In a mixing bowl, combine sliced chicken breast, gluten-free soy sauce, garlic, ginger, salt, and black pepper. Marinate for at least 15 minutes.
- While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 300 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
- Once the rice is cooking, prepare the chicken. Dredge each marinated chicken slice in cornstarch, then dip into the beaten egg, allowing excess to drip off.
- Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken slices, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- In the same skillet, add sliced bell pepper and cook for 2-3 minutes until slightly softened. Add the cooked rice to the skillet, drizzle with sesame oil, and toss to combine.
- To serve, divide the rice mixture between two bowls, top with crispy chicken, and garnish with chopped green onions and sesame seeds.
