Ingredients

  • Chicken breast - 300 grams, sliced
  • Gluten-free soy sauce - 3 tablespoons
  • Cornstarch - 4 tablespoons
  • Egg - 1, beaten
  • Vegetable oil - 100 ml, for frying
  • Jasmine rice - 150 grams
  • Water - 300 ml, for cooking rice
  • Bell pepper - 1, sliced
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a mixing bowl, combine sliced chicken breast, gluten-free soy sauce, garlic, ginger, salt, and black pepper. Marinate for at least 15 minutes.
  2. While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 300 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Once the rice is cooking, prepare the chicken. Dredge each marinated chicken slice in cornstarch, then dip into the beaten egg, allowing excess to drip off.
  4. Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken slices, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. In the same skillet, add sliced bell pepper and cook for 2-3 minutes until slightly softened. Add the cooked rice to the skillet, drizzle with sesame oil, and toss to combine.
  6. To serve, divide the rice mixture between two bowls, top with crispy chicken, and garnish with chopped green onions and sesame seeds.
