- Chicken thighs, boneless and skinless - 300 grams
- Gluten-free soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Cornstarch - 1/2 cup
- Egg - 1 large
- Cooked jasmine rice - 2 cups
- Green onions, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - for frying
Steps
- In a bowl, combine gluten-free soy sauce, rice vinegar, sesame oil, garlic, ginger, salt, and pepper to create a marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade. Let it sit for 15 minutes.
- In a separate bowl, beat the egg and set it aside. Place the cornstarch in another shallow dish.
- Heat vegetable oil in a frying pan over medium-high heat.
- Remove the chicken from the marinade, dip each piece into the beaten egg, and then coat with cornstarch.
- Fry the chicken pieces in the hot oil for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- While the chicken is frying, heat the cooked jasmine rice in a pot or microwave.
- To serve, place a portion of rice on each plate, top with crispy chicken, and sprinkle with chopped green onions.
