Ingredients

  • Chicken thighs, boneless and skinless - 300 grams
  • Gluten-free soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Cornstarch - 1/2 cup
  • Egg - 1 large
  • Cooked jasmine rice - 2 cups
  • Green onions, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - for frying

Steps

  1. In a bowl, combine gluten-free soy sauce, rice vinegar, sesame oil, garlic, ginger, salt, and pepper to create a marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Let it sit for 15 minutes.
  3. In a separate bowl, beat the egg and set it aside. Place the cornstarch in another shallow dish.
  4. Heat vegetable oil in a frying pan over medium-high heat.
  5. Remove the chicken from the marinade, dip each piece into the beaten egg, and then coat with cornstarch.
  6. Fry the chicken pieces in the hot oil for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  7. While the chicken is frying, heat the cooked jasmine rice in a pot or microwave.
  8. To serve, place a portion of rice on each plate, top with crispy chicken, and sprinkle with chopped green onions.
