- Chicken breast - 300 grams
- Gluten-free rice noodles - 150 grams
- Cornstarch - 50 grams
- Egg - 1 large
- Soy sauce (gluten-free) - 30 ml
- Sesame oil - 15 ml
- Vegetable oil - 60 ml (for frying)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Lime - 1, wedged for serving
Steps
- 1. Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
- 2. In a bowl, whisk the egg and add the chicken pieces, coating them evenly.
- 3. Place the cornstarch in a shallow dish and dredge the egg-coated chicken pieces in it until fully covered.
- 4. Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
- 5. In the same skillet, add sesame oil and stir-fry the minced garlic and grated ginger for 30 seconds until fragrant.
- 6. Add the sliced bell pepper and julienned carrot to the skillet, stir-frying for about 3-4 minutes until tender-crisp.
- 7. Cook the gluten-free rice noodles according to package instructions, then drain and add to the skillet with the vegetables.
- 8. Pour the soy sauce over the noodles and toss everything together for an additional 2-3 minutes until well combined and heated through.
- 9. Serve the stir-fried noodles in bowls topped with the crispy chicken and garnish with chopped green onion and lime wedges.
