Ingredients

  • Eggplant - 1 medium (about 300g)
  • Cornstarch - 50g
  • Vegetable oil - 50ml (for frying)
  • Soy sauce (gluten-free) - 2 tablespoons (30ml)
  • Hoisin sauce - 2 tablespoons (30ml)
  • Honey - 1 tablespoon (15ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 1, chopped (for garnish)

Steps

  1. Begin by cutting the eggplant into 1cm thick rounds and sprinkling them with a little salt. Let them sit for about 10 minutes to draw out excess moisture.
  2. Rinse the eggplant rounds under cold water and pat them dry with a paper towel.
  3. In a bowl, coat the dried eggplant rounds with cornstarch, ensuring they are evenly covered.
  4. Heat vegetable oil in a skillet over medium-high heat. Once hot, carefully add the coated eggplant rounds in batches, frying them until golden brown and crispy, about 3-4 minutes on each side. Remove and place on a paper towel-lined plate.
  5. In a small saucepan, combine soy sauce, hoisin sauce, honey, rice vinegar, minced garlic, and grated ginger. Cook over medium heat until the mixture starts to simmer, stirring occasionally. Let it reduce for about 2-3 minutes.
  6. Once the eggplant is crispy, drizzle the BBQ sauce over the top, tossing gently to coat the pieces evenly.
  7. Serve the crispy BBQ eggplant garnished with sesame seeds and chopped green onions.
