- Sweet corn kernels - 200 grams
- Vegetable broth - 500 ml
- Soy sauce (low sodium) - 1 tablespoon
- Ginger (fresh, minced) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Scallions (chopped) - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Cilantro (for garnish) - a few sprigs
Steps
- In a medium pot, heat the vegetable broth over medium heat.
- Add the sweet corn, ginger, and garlic to the pot, and bring to a simmer.
- Simmer for about 10 minutes until the corn is tender.
- Using an immersion blender, puree the mixture until smooth, or transfer to a blender and blend in batches.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
- Return the pureed soup to the heat, and slowly stir in the cornstarch slurry.
- Add the soy sauce, sesame oil, and season with salt and pepper to taste.
- Cook for an additional 5 minutes until the soup thickens slightly.
- Serve hot, garnished with chopped scallions and cilantro.
