Ingredients

  • Sweet corn kernels - 200 grams
  • Vegetable broth - 500 ml
  • Soy sauce (low sodium) - 1 tablespoon
  • Ginger (fresh, minced) - 1 teaspoon
  • Garlic (minced) - 1 teaspoon
  • Scallions (chopped) - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Cilantro (for garnish) - a few sprigs

Steps

  1. In a medium pot, heat the vegetable broth over medium heat.
  2. Add the sweet corn, ginger, and garlic to the pot, and bring to a simmer.
  3. Simmer for about 10 minutes until the corn is tender.
  4. Using an immersion blender, puree the mixture until smooth, or transfer to a blender and blend in batches.
  5. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
  6. Return the pureed soup to the heat, and slowly stir in the cornstarch slurry.
  7. Add the soy sauce, sesame oil, and season with salt and pepper to taste.
  8. Cook for an additional 5 minutes until the soup thickens slightly.
  9. Serve hot, garnished with chopped scallions and cilantro.
