Ingredients

  • Chicken breast - 200 grams, diced
  • Fresh corn kernels - 150 grams
  • Chicken broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cornstarch - 1 tablespoon, mixed with 2 tablespoons of water for thickening
  • Water - 1 liter

Steps

  1. In a medium pot, heat the sesame oil over medium heat and add minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
  2. Add the diced chicken breast to the pot and cook until the chicken is no longer pink, about 5-7 minutes.
  3. Pour in the chicken broth and 1 liter of water, followed by the fresh corn kernels. Bring to a boil.
  4. Once boiling, reduce the heat and let the soup simmer for 10 minutes.
  5. Stir in the soy sauce, chopped green onions, salt, and pepper to taste.
  6. To thicken the soup, slowly add the cornstarch mixture while stirring continuously. Let it simmer for another 2-3 minutes until the soup thickens slightly.
  7. Serve hot, garnished with additional green onions if desired.
