- Chicken breast - 200 grams, diced
- Fresh corn kernels - 150 grams
- Chicken broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons of water for thickening
- Water - 1 liter
Steps
- In a medium pot, heat the sesame oil over medium heat and add minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
- Add the diced chicken breast to the pot and cook until the chicken is no longer pink, about 5-7 minutes.
- Pour in the chicken broth and 1 liter of water, followed by the fresh corn kernels. Bring to a boil.
- Once boiling, reduce the heat and let the soup simmer for 10 minutes.
- Stir in the soy sauce, chopped green onions, salt, and pepper to taste.
- To thicken the soup, slowly add the cornstarch mixture while stirring continuously. Let it simmer for another 2-3 minutes until the soup thickens slightly.
- Serve hot, garnished with additional green onions if desired.
