Ingredients

  • Chickpeas - 200 grams, cooked
  • Carrot - 50 grams, grated
  • Coriander leaves - 30 grams, chopped
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Steamed bao buns - 2 pieces
  • Cucumber - 50 grams, thinly sliced
  • Lettuce - 2 leaves

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add grated carrot, chopped coriander leaves, green onion, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, salt, and black pepper to the mashed chickpeas. Mix well until combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat a non-stick skillet over medium heat and lightly grease it with a little oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, steam the bao buns according to package instructions until soft and warm.
  6. Assemble the burger by placing a lettuce leaf on the bottom half of each bao bun, followed by the cooked patty, cucumber slices, and then the top half of the bun.
