Ingredients

  • Chicken breast - 200 grams
  • Fresh coriander (cilantro) - 30 grams, finely chopped
  • Red bell pepper - 1 medium, thinly sliced
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, grated
  • Green onions - 2, finely sliced
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Lime juice - 2 tablespoons
  • Coconut aminos - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by cooking the chicken breast. Season it with salt and pepper, then grill or pan-sear over medium heat for about 10-12 minutes, or until cooked through. Let it rest before slicing.
  2. In a large bowl, combine the chopped coriander, red bell pepper, cucumber, carrot, and green onions.
  3. In a separate small bowl, whisk together the minced garlic, grated ginger, lime juice, coconut aminos, olive oil, sesame oil, and a pinch of salt and pepper to create the dressing.
  4. Once the chicken has cooled slightly, slice it into bite-sized pieces and add it to the bowl with the vegetables.
  5. Pour the dressing over the chicken and vegetable mixture, tossing thoroughly to combine all ingredients.
  6. Serve immediately or refrigerate for up to 30 minutes to meld the flavors before serving.
