Ingredients
- Dried jellyfish - 50 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1/2, julienned
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Sugar - 1 teaspoon
- Salt - to taste
- Sesame seeds - 1 tablespoon, toasted
Steps
- Soak the dried jellyfish in cold water for about 20 minutes or until rehydrated. Drain and rinse under cold water.
- Bring a pot of water to a boil and blanch the rehydrated jellyfish for 1-2 minutes. Drain and let it cool.
- In a bowl, combine the julienned cucumber, carrot, red bell pepper, and chopped green onion.
- In a separate small bowl, mix the minced garlic, soy sauce, rice vinegar, sesame oil, sugar, and salt. Stir until the sugar dissolves.
- Add the cooled jellyfish to the vegetable mixture and pour the dressing over it. Toss well to combine.
- Sprinkle the toasted sesame seeds on top before serving. Chill in the refrigerator for 10 minutes before serving for a refreshing taste.
