Ingredients

  • Dried jellyfish - 50 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1/2, julienned
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Soak the dried jellyfish in cold water for about 20 minutes or until rehydrated. Drain and rinse under cold water.
  2. Bring a pot of water to a boil and blanch the rehydrated jellyfish for 1-2 minutes. Drain and let it cool.
  3. In a bowl, combine the julienned cucumber, carrot, red bell pepper, and chopped green onion.
  4. In a separate small bowl, mix the minced garlic, soy sauce, rice vinegar, sesame oil, sugar, and salt. Stir until the sugar dissolves.
  5. Add the cooled jellyfish to the vegetable mixture and pour the dressing over it. Toss well to combine.
  6. Sprinkle the toasted sesame seeds on top before serving. Chill in the refrigerator for 10 minutes before serving for a refreshing taste.
