  • Tapioca starch - 1 tablespoon
  • Vanilla extract - 1/2 teaspoon
  • Grated coconut (unsweetened) - 30 grams (for topping)

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and place it in a steamer lined with cheesecloth or parchment paper, spreading it out evenly.
  3. Steam the rice for about 25-30 minutes, or until it becomes translucent and tender.
  4. In a separate saucepan, combine coconut milk, sugar, salt, tapioca starch, and vanilla extract. Heat over low-medium heat, stirring constantly until the mixture thickens slightly and is well combined.
  5. Once the rice is cooked, transfer it to a mixing bowl and pour the coconut mixture over it. Stir gently until the rice is fully coated.
  6. Line a small square or rectangular dish with plastic wrap, leaving some overhang for easy removal. Pour the sticky rice mixture into the dish and press it down firmly to create an even layer.
