- Glutinous rice - 150g
- Coconut milk - 200ml
- Protein powder (vanilla or unflavored) - 30g
- Sugar - 30g
- Salt - 1/4 tsp
- Desiccated coconut - 50g
- Water - 300ml
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in 300ml of water for at least 2 hours or overnight.
- After soaking, drain the rice and transfer it to a steamer lined with cheesecloth or a clean kitchen towel.
- Steam the rice over boiling water for about 20 minutes, or until it becomes translucent and tender.
- In a bowl, mix the steamed rice with coconut milk, protein powder, sugar, and salt until well combined.
- Let the mixture cool slightly, then wet your hands and form the mixture into small balls, about 3-4 cm in diameter.
- Roll each ball in desiccated coconut to coat evenly.
- Place the coconut sticky rice balls on a plate and refrigerate for at least 10 minutes to firm up before serving.
