Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 100 ml
  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Coconut flakes - 30 grams, toasted
  • Green onions - 2, sliced
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat a splash of vegetable broth over medium heat and sauté the shallot, garlic, and ginger until fragrant, about 2-3 minutes.
  3. Add the rinsed rice to the saucepan and stir for 1 minute to toast the rice slightly.
  4. Pour in the coconut milk, remaining vegetable broth, and salt. Bring to a gentle boil.
  5. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes to steam.
  7. Fluff the rice with a fork and stir in the toasted coconut flakes and green onions.
  8. Serve warm, garnished with additional green onions and a sprinkle of chili flakes if desired.
