- Jasmine rice - 150 grams
- Coconut milk - 200 ml
- Vegetable broth - 100 ml
- Shallot - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Salt - 1/2 teaspoon
- Coconut flakes - 30 grams, toasted
- Green onions - 2, sliced
- Chili flakes - 1/4 teaspoon (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat a splash of vegetable broth over medium heat and sauté the shallot, garlic, and ginger until fragrant, about 2-3 minutes.
- Add the rinsed rice to the saucepan and stir for 1 minute to toast the rice slightly.
- Pour in the coconut milk, remaining vegetable broth, and salt. Bring to a gentle boil.
- Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes to steam.
- Fluff the rice with a fork and stir in the toasted coconut flakes and green onions.
- Serve warm, garnished with additional green onions and a sprinkle of chili flakes if desired.
