- Coconut milk - 200 ml
- Vegetable broth - 200 ml

- Ginger - 1 tablespoon, minced
- Curry powder - 1 tablespoon
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Chili flakes - 1/2 teaspoon (optional)
- Spinach - 50 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Coriander leaves - for garnish
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a medium pot, heat a little oil over medium heat and sauté the chopped onion until it is translucent.
- Add the minced garlic and ginger, sautéing for another minute until fragrant.
- Stir in the curry powder, turmeric, cumin, and chili flakes, cooking for 1-2 minutes to toast the spices.
- Add the rinsed lentils to the pot, followed by the vegetable broth and coconut milk. Stir well.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
- Add the chopped spinach and stir until wilted. Season with salt and black pepper to taste.
- Serve hot, garnished with fresh coriander leaves.
