Ingredients

  • Red lentils - 100 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 200 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Spinach - 50 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Coriander leaves - for garnish

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a medium pot, heat a little oil over medium heat and sauté the chopped onion until it is translucent.
  3. Add the minced garlic and ginger, sautéing for another minute until fragrant.
  4. Stir in the curry powder, turmeric, cumin, and chili flakes, cooking for 1-2 minutes to toast the spices.
  5. Add the rinsed lentils to the pot, followed by the vegetable broth and coconut milk. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
  7. Add the chopped spinach and stir until wilted. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh coriander leaves.
