Ingredients

  • Jasmine rice - 150 grams
  • Fresh cilantro - 30 grams, chopped

  • Green onion - 2 stalks, finely sliced
  • Vegetable broth - 300 ml
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the rinsed jasmine rice to the pot and toast it for 2-3 minutes, stirring frequently.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  5. Once cooked, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
  6. Fluff the rice with a fork, then stir in the chopped cilantro, green onion, lime juice, salt, and black pepper. Mix well to combine.
  7. Serve warm as a side dish or as a base for your favorite protein.
