- Jasmine rice - 150 grams

- Vegetable broth - 300 ml
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the rinsed jasmine rice to the pot and toast it for 2-3 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the chopped cilantro, green onion, lime juice, salt, and black pepper. Mix well to combine.
- Serve warm as a side dish or as a base for your favorite protein.
