  • Pizza dough - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Red onion - 1/2, thinly sliced
  • Mushrooms - 100 grams, sliced
  • Corn - 100 grams, cooked
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Mozzarella cheese - 100 grams, shredded
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to about 10 inches in diameter and place it on a baking sheet.
  3. In a skillet, heat the olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  4. Add the sliced red bell pepper, zucchini, red onion, and mushrooms to the skillet, cooking for 5-7 minutes until the vegetables are tender.
  5. Stir in the cooked corn, and season the mixture with salt and black pepper.
  6. Remove the skillet from heat and add half of the chopped cilantro and lime juice, mixing well.
  7. Spread the vegetable mixture evenly over the rolled-out pizza dough.
