- Water - 300 milliliters
- Fresh cilantro - 30 grams, chopped
- Lime juice - 30 milliliters (about 1 lime)
- Olive oil - 1 tablespoon (15 milliliters)
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon (3 grams)
- Black pepper - 1/4 teaspoon (1 gram)
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and 300 milliliters of water. Add 1/2 teaspoon of salt and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Remove the skillet from heat and stir in the chopped cilantro, lime juice, black pepper, and an additional pinch of salt if desired.
- Once the rice is cooked, fluff it with a fork and gently mix in the cilantro-lime mixture until evenly combined.
- Serve warm as a side dish or as a base for your favorite protein.
