  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 30 milliliters (about 1 lime)
  • Olive oil - 1 tablespoon (15 milliliters)
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon (3 grams)
  • Black pepper - 1/4 teaspoon (1 gram)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and 300 milliliters of water. Add 1/2 teaspoon of salt and bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  5. Remove the skillet from heat and stir in the chopped cilantro, lime juice, black pepper, and an additional pinch of salt if desired.
