Ingredients
- Pork tenderloin - 300 grams
- Fresh cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Honey - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red chili flakes - 1/4 teaspoon (optional)
Steps
- In a bowl, combine lime juice, soy sauce, minced garlic, grated ginger, honey, olive oil, salt, black pepper, and red chili flakes to create the marinade.
- Slice the pork tenderloin into 1-inch thick medallions and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to let the flavors meld.
- Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off.
- Cook the pork medallions for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
- In the last minute of cooking, sprinkle the chopped cilantro over the pork to infuse it with fresh flavor.
- Remove from heat and let rest for a few minutes before slicing. Serve warm with additional lime wedges and a sprinkle of cilantro on top.
