Ingredients

  • 100g firm tofu, crumbled
  • 50g shiitake mushrooms, finely chopped
  • 50g carrot, grated
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 whole grain steamed buns
  • 2 tablespoons hoisin sauce
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Steps

  1. In a mixing bowl, combine crumbled tofu, chopped shiitake mushrooms, grated carrot, green onions, soy sauce, sesame oil, cornstarch, salt, and pepper. Mix well to form a patty mixture.
  2. Divide the mixture into two equal portions and shape them into patties.
  3. Preheat a non-stick skillet over medium heat and lightly grease it. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  4. While the patties are cooking, steam the whole grain buns for about 5 minutes until they are warm and soft.
  5. To assemble, spread hoisin sauce on the bottom half of each bun, place a cooked patty on top, and garnish with fresh cilantro.
  6. Top with the other half of the bun, and serve immediately.
