- Soft tofu - 200 grams
- Dried chrysanthemum flowers - 10 grams
- Vegetable broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 cm piece, sliced
- Spring onions - 2, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- White pepper - to taste
- Chili oil - optional, for serving
Steps
- Rinse the dried chrysanthemum flowers under cold water and set aside.
- In a pot, heat the vegetable broth over medium heat and add the minced garlic and sliced ginger.
- Bring the broth to a gentle simmer, then add the rinsed chrysanthemum flowers and cook for about 5 minutes.
- Carefully add the soft tofu to the pot, breaking it into large chunks if desired, and let it simmer for another 5-7 minutes.
- Stir in the soy sauce, sesame oil, salt, and white pepper to taste.
- Remove from heat, and add in the chopped spring onions.
- Serve hot, with a drizzle of chili oil if desired.
