Steps
- Wash the Choy Sum thoroughly under running water to remove any dirt and impurities.
- In a large pot, bring 1 cup of water to a boil. Once boiling, add the Choy Sum and blanch for 1-2 minutes until vibrant green and tender-crisp.
- Remove the Choy Sum from the pot and immediately transfer to a bowl of ice water to stop the cooking process. Drain and set aside.
