  • Bell Pepper - 1/2, thinly sliced
  • Green Onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy Sauce - 3 tablespoons (or tamari for gluten-free)
  • Sesame Oil - 1 tablespoon
  • Olive Oil - 1 tablespoon
  • Egg - 1, beaten
  • Cooked Chicken Breast - 150 grams, sliced (optional)
  • Salt - to taste
  • Black Pepper - to taste
  • Sesame Seeds - 1 tablespoon, for garnish

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zoodles and set aside.
  2. In a large skillet or wok, heat the olive oil over medium heat.
  3. Add minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
  4. Add the sliced bell pepper and julienned carrot to the skillet, cooking for 2-3 minutes until they begin to soften.
  5. If using, add the sliced cooked chicken breast to the skillet and stir to combine.
  6. Push the vegetables to the side of the skillet and pour the beaten egg into the center, scrambling it until fully cooked.
  7. Add the zoodles to the skillet and pour in the soy sauce and sesame oil, tossing everything together until well combined and heated through, about 2-3 minutes.
  8. Season with salt and black pepper to taste, then remove from heat.
