Ingredients

  • Chow Mein noodles - 160 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Snow peas - 100 grams, trimmed
  • Green onions - 2, sliced
  • Soy sauce - 3 tablespoons (ensure kosher)
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Bring a pot of salted water to a boil and cook the Chow Mein noodles according to package instructions (usually about 3-4 minutes). Drain and rinse under cold water to stop the cooking process, then set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  3. Add the julienned carrot, sliced bell pepper, and trimmed snow peas to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are tender but still crisp.
  4. Add the cooked Chow Mein noodles to the skillet, followed by the soy sauce and sesame oil. Toss everything together to ensure the noodles are well coated with the sauce and heated through, about 2-3 minutes.
  5. Season with salt and black pepper to taste. Remove from heat and stir in the sliced green onions.
  6. Serve hot, garnished with sesame seeds.
