Ingredients

  • Wide rice noodles - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Bell pepper, sliced - 1 medium
  • Carrot, julienned - 1 medium
  • Snap peas - 100 grams
  • Soy sauce (low sodium) - 3 tablespoons
  • Tofu, cubed - 150 grams
  • Green onions, chopped - 2 stalks
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Soak the wide rice noodles in hot water for about 15 minutes until soft, then drain and set aside.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  4. Add the cubed tofu and stir-fry for about 5 minutes until golden brown, then remove from the skillet and set aside.
  5. In the same skillet, add the sliced bell pepper, julienned carrot, and snap peas, stir-frying for about 3-4 minutes until just tender.
  6. Return the tofu to the skillet, then add the soaked rice noodles.
  7. Pour in the soy sauce, sesame oil, and season with salt and pepper to taste, tossing everything together for 2-3 minutes until heated through.
  8. Garnish with chopped green onions before serving.
