Ingredients
- Wide rice noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Bell pepper, sliced - 1 medium
- Carrot, julienned - 1 medium
- Snap peas - 100 grams
- Soy sauce (low sodium) - 3 tablespoons
- Tofu, cubed - 150 grams
- Green onions, chopped - 2 stalks
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Soak the wide rice noodles in hot water for about 15 minutes until soft, then drain and set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add the cubed tofu and stir-fry for about 5 minutes until golden brown, then remove from the skillet and set aside.
- In the same skillet, add the sliced bell pepper, julienned carrot, and snap peas, stir-frying for about 3-4 minutes until just tender.
- Return the tofu to the skillet, then add the soaked rice noodles.
- Pour in the soy sauce, sesame oil, and season with salt and pepper to taste, tossing everything together for 2-3 minutes until heated through.
- Garnish with chopped green onions before serving.
