Ingredients

  • Whole tilapia fish - 500 grams, cleaned and scaled
  • Vegetable oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Dried red chili peppers - 10 pieces, adjust to taste
  • Ground Sichuan peppercorn - 1 teaspoon
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Chili bean paste - 1 tablespoon
  • Spring onions - 2 stalks, chopped
  • Fresh coriander - for garnish
  • Salt - to taste
  • Lemon - 1, sliced, for serving

Steps

  1. In a bowl, mix the soy sauce, rice vinegar, chili bean paste, minced garlic, minced ginger, ground Sichuan peppercorn, and salt to create a marinade.
  2. Place the cleaned tilapia fish in a large dish and pour the marinade over it, ensuring the fish is well-coated. Let it marinate for at least 20 minutes.
  3. While the fish is marinating, preheat your grill or grill pan over medium-high heat and brush it with vegetable oil.
  4. Once the grill is hot, carefully place the marinated fish on it, cooking for about 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.
  5. During the last few minutes of grilling, add the dried red chili peppers to the grill, allowing them to blister and infuse their flavor.
  6. Once cooked, remove the fish and chili peppers from the grill, and garnish the fish with chopped spring onions and fresh coriander.
  7. Serve immediately with lemon slices on the side.
