- Whole tilapia fish - 500 grams, cleaned and scaled
- Vegetable oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Dried red chili peppers - 10 pieces, adjust to taste
- Ground Sichuan peppercorn - 1 teaspoon
- Soy sauce (gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Chili bean paste - 1 tablespoon
- Spring onions - 2 stalks, chopped
- Fresh coriander - for garnish
- Salt - to taste
- Lemon - 1, sliced, for serving
Steps
- In a bowl, mix the soy sauce, rice vinegar, chili bean paste, minced garlic, minced ginger, ground Sichuan peppercorn, and salt to create a marinade.
- Place the cleaned tilapia fish in a large dish and pour the marinade over it, ensuring the fish is well-coated. Let it marinate for at least 20 minutes.
- While the fish is marinating, preheat your grill or grill pan over medium-high heat and brush it with vegetable oil.
- Once the grill is hot, carefully place the marinated fish on it, cooking for about 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.
- During the last few minutes of grilling, add the dried red chili peppers to the grill, allowing them to blister and infuse their flavor.
- Once cooked, remove the fish and chili peppers from the grill, and garnish the fish with chopped spring onions and fresh coriander.
- Serve immediately with lemon slices on the side.
