Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Fresh chives - 50 grams, finely chopped
  • Green onion - 1, finely chopped
  • Salt - 1/2 teaspoon
  • White pepper - 1/4 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons for frying

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, combine the soaked rice and 300 milliliters of water. Bring to a boil, then reduce heat to low, cover, and cook for 15-18 minutes until the water is absorbed and the rice is tender.
  3. Once the rice is cooked, let it cool for a few minutes, then transfer it to a mixing bowl.
  4. Add the finely chopped chives, green onion, salt, white pepper, and sesame oil to the bowl. Mix until the ingredients are well combined.
  5. Divide the rice mixture into 4 equal portions and shape them into small, flat cakes (about 1 cm thick).
  6. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
  7. Fry the rice cakes in batches for about 3-4 minutes on each side or until they are golden brown and crispy.
  8. Remove the rice cakes from the skillet and place them on a plate lined with paper towels to drain excess oil.
  9. Serve warm, garnished with additional chopped chives if desired.
