- Jasmine rice - 150 grams
- Water - 300 milliliters
- Fresh chives - 50 grams, finely chopped
- Green onion - 1, finely chopped
- Salt - 1/2 teaspoon
- White pepper - 1/4 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons for frying
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, combine the soaked rice and 300 milliliters of water. Bring to a boil, then reduce heat to low, cover, and cook for 15-18 minutes until the water is absorbed and the rice is tender.
- Once the rice is cooked, let it cool for a few minutes, then transfer it to a mixing bowl.
- Add the finely chopped chives, green onion, salt, white pepper, and sesame oil to the bowl. Mix until the ingredients are well combined.
- Divide the rice mixture into 4 equal portions and shape them into small, flat cakes (about 1 cm thick).
- Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
- Fry the rice cakes in batches for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the rice cakes from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Serve warm, garnished with additional chopped chives if desired.
