- All-purpose flour - 100 grams
- Water - 50 ml
- Salt - 1/4 teaspoon
- Eggs - 2 large
- Fresh chives - 50 grams, chopped
- Vegetable oil - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Soy sauce - 1 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while kneading until a smooth dough forms. Cover with a cloth and let it rest for 10 minutes.
- In another bowl, beat the eggs, then mix in the chopped chives, black pepper, and soy sauce.
- Divide the rested dough into two equal portions. Roll each portion into a thin circle, about 20 cm in diameter.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Place one dough circle in the skillet and cook for 2-3 minutes until slightly golden.
- Pour half of the egg and chive mixture onto the cooked side of the dough in the skillet. Cook for another 2-3 minutes until the eggs are set and the bottom is golden brown.
- Carefully flip the pie using a spatula and cook for an additional 2-3 minutes until the other side is golden brown. Remove from skillet and repeat with the second dough circle and remaining egg mixture.
- Slice each chive and egg pie into wedges and serve warm.
