Ingredients

  • all-purpose flour - 200 grams
  • water - 100 milliliters
  • salt - 1/2 teaspoon
  • scallions (green onions) - 4 stalks, finely chopped
  • vegetable oil - 3 tablespoons
  • sesame oil - 1 tablespoon
  • black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add water, stirring until a dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.
  3. After resting, divide the dough into 2 equal parts. Roll out one part into a thin circle (about 25 cm in diameter).
  4. Brush the rolled-out dough with 1 tablespoon of vegetable oil and sprinkle with black pepper and half of the chopped scallions.
  5. Starting from one edge, roll the dough tightly into a log, then coil it into a spiral shape. Flatten gently with your hands.
  6. Roll out the coiled dough again into a flat pancake (about 1 cm thick). Repeat the process with the second piece of dough.
  7. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil. Cook one pancake for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove from the skillet and place on paper towels to drain excess oil. Repeat with the second pancake.
  9. Cut into wedges and serve warm with a dipping sauce of soy sauce and sesame oil.
