Ingredients

  • All-purpose flour - 120 grams
  • Powdered sugar - 30 grams
  • Unsalted margarine - 60 grams (softened)
  • Egg yolk - 1 large
  • Vanilla extract - 1 teaspoon
  • Pineapple filling - 100 grams (store-bought or homemade)
  • Cornstarch - 1 tablespoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour, powdered sugar, and a pinch of salt.
  3. Add the softened margarine, egg yolk, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  5. While the dough is chilling, prepare the pineapple filling by mixing the pineapple with cornstarch in a small saucepan over medium heat until thickened, about 5-7 minutes. Let it cool.
  6. Remove the dough from the refrigerator and divide it into two equal portions.
  7. Roll out one portion between two sheets of parchment paper to about 0.5 cm thick and cut into a circle that fits your tartlet molds.
  8. Press the dough into the molds, then fill each with the cooled pineapple filling.
  9. Roll out the second portion of dough and cut out another circle to top each tartlet. Seal the edges by pressing down with a fork.
  10. Bake in the preheated oven for 20-25 minutes or until golden brown.
  11. Remove from the oven and let cool for a few minutes before transferring to a wire rack.
