- Unsalted margarine - 60 grams (softened)
- Egg yolk - 1 large
- Vanilla extract - 1 teaspoon
- Pineapple filling - 100 grams (store-bought or homemade)
- Cornstarch - 1 tablespoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour, powdered sugar, and a pinch of salt.
- Add the softened margarine, egg yolk, and vanilla extract to the dry ingredients and mix until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- While the dough is chilling, prepare the pineapple filling by mixing the pineapple with cornstarch in a small saucepan over medium heat until thickened, about 5-7 minutes. Let it cool.
- Remove the dough from the refrigerator and divide it into two equal portions.
- Roll out one portion between two sheets of parchment paper to about 0.5 cm thick and cut into a circle that fits your tartlet molds.
- Press the dough into the molds, then fill each with the cooled pineapple filling.
- Roll out the second portion of dough and cut out another circle to top each tartlet. Seal the edges by pressing down with a fork.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and let cool for a few minutes before transferring to a wire rack.
