Ingredients

  • Dried goji berries - 20 grams
  • Dried shiitake mushrooms - 10 grams
  • Dried lotus seeds - 15 grams
  • Chinese red dates (jujube) - 6 pieces
  • Chicken breast (skinless, diced) - 150 grams
  • Ginger (sliced) - 10 grams
  • Garlic (cloves, smashed) - 2 cloves
  • Water - 1 liter
  • Salt - to taste
  • Spring onions (chopped) - for garnish

Steps

  1. Soak the dried goji berries, shiitake mushrooms, and lotus seeds in warm water for 30 minutes until softened.
  2. In a pot, add 1 liter of water and bring it to a boil.
  3. Add the diced chicken breast, ginger, garlic, soaked goji berries, shiitake mushrooms, lotus seeds, and red dates into the boiling water.
  4. Reduce the heat to a simmer and cook for 40 minutes, skimming off any foam that rises to the surface.
  5. Season the soup with salt to taste and allow it to simmer for an additional 5 minutes.
  6. Serve hot, garnished with chopped spring onions.
