Ingredients
- All-purpose flour - 100 grams
- Water - 250 milliliters
- Eggs - 2 large
- Green onions - 2 stalks, finely chopped
- Carrot - 1 small, grated
- Soy sauce (kosher) - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons for cooking
- Fresh cilantro - a handful, chopped (optional)
Steps
- In a mixing bowl, combine the flour and water, whisking until smooth to form a batter. Let it rest for 10 minutes.
- In a separate bowl, beat the eggs and mix in the chopped green onions, grated carrot, soy sauce, salt, and black pepper.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of vegetable oil.
- Pour a ladleful of the crepe batter into the skillet, tilting the pan to spread it evenly into a thin layer. Cook for about 2-3 minutes until the edges start to lift and the bottom is lightly golden.
- Flip the crepe and pour a portion of the egg mixture onto one half of the crepe. Cook for another 1-2 minutes until the eggs are set.
- Fold the crepe over the filling and slide it onto a plate. Repeat the process with the remaining batter and filling.
- Serve warm, garnished with chopped fresh cilantro if desired.
