Ingredients

  • All-purpose flour - 200 grams
  • Boiling water - 120 milliliters
  • Chinese chives - 100 grams, finely chopped
  • Salt - 1/2 teaspoon
  • Vegetable oil - 3 tablespoons
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and boiling water, stirring with a fork until a shaggy dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth, then cover with a damp cloth and let it rest for 15 minutes.
  3. After resting, divide the dough into two equal portions and roll each portion into a thin circle (about 20 cm in diameter).
  4. In a small bowl, mix the chopped Chinese chives, salt, black pepper, sesame oil, and 1 tablespoon of vegetable oil.
  5. Spread the chive mixture evenly over each rolled dough circle, leaving a small border around the edges.
  6. Roll each circle tightly into a cylinder, then coil the cylinder into a spiral shape and flatten gently with your palm.
  7. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
  8. Place one pancake in the skillet and cook for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the second pancake.
  9. Remove from the skillet and let cool slightly before slicing into wedges. Serve warm.
