- Chinese chives - 100 grams, finely chopped
- Salt - 1/2 teaspoon
- Vegetable oil - 3 tablespoons
- Sesame oil - 1 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and boiling water, stirring with a fork until a shaggy dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth, then cover with a damp cloth and let it rest for 15 minutes.
- After resting, divide the dough into two equal portions and roll each portion into a thin circle (about 20 cm in diameter).
- In a small bowl, mix the chopped Chinese chives, salt, black pepper, sesame oil, and 1 tablespoon of vegetable oil.
- Spread the chive mixture evenly over each rolled dough circle, leaving a small border around the edges.
- Roll each circle tightly into a cylinder, then coil the cylinder into a spiral shape and flatten gently with your palm.
- Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
- Place one pancake in the skillet and cook for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the second pancake.
- Remove from the skillet and let cool slightly before slicing into wedges. Serve warm.
