- Silken tofu - 400 grams
- Green onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Red bell pepper - 1 small, diced
- Mushrooms - 100 grams, sliced
- Baby spinach - 100 grams
- Salt - to taste
- Pepper - to taste
- Cilantro - for garnish
Steps
- Drain the silken tofu and cut it into cubes.
- In a non-stick skillet, heat the sesame oil over medium heat.
- Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
- Add the diced red bell pepper and sliced mushrooms to the skillet, cooking for 3-4 minutes until softened.
- Gently add the tofu cubes to the skillet, being careful not to break them, and drizzle with soy sauce.
- Cook for another 5 minutes, gently stirring occasionally, until the tofu is heated through.
- In the last minute of cooking, add the baby spinach and chopped green onions, stirring until the spinach wilts.
- Season with salt and pepper to taste, then remove from heat.
- Serve warm, garnished with fresh cilantro.
