- Silken tofu - 300 grams
- Unsweetened almond milk - 200 ml
- Erythritol sweetener - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Agar-agar powder - 1 teaspoon
- Water - 100 ml
- Chopped fresh fruits (optional) - 50 grams
Steps
- In a small saucepan, combine the agar-agar powder and 100 ml of water. Bring to a boil over medium heat, stirring constantly until completely dissolved.
- In a blender, combine the silken tofu, almond milk, erythritol, and vanilla extract. Blend until smooth and creamy.
- Once the agar-agar mixture is boiling and dissolved, remove it from heat and let it cool for a minute before pouring it into the blender with the tofu mixture.
- Blend again until everything is well combined and smooth.
- Pour the mixture into two serving bowls or ramekins and refrigerate for at least 2 hours or until set.
- Serve chilled, topped with chopped fresh fruits if desired.
