Ingredients

  • Silken tofu - 300 grams
  • Unsweetened almond milk - 200 ml
  • Erythritol sweetener - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Agar-agar powder - 1 teaspoon
  • Water - 100 ml
  • Chopped fresh fruits (optional) - 50 grams

Steps

  1. In a small saucepan, combine the agar-agar powder and 100 ml of water. Bring to a boil over medium heat, stirring constantly until completely dissolved.
  2. In a blender, combine the silken tofu, almond milk, erythritol, and vanilla extract. Blend until smooth and creamy.
  3. Once the agar-agar mixture is boiling and dissolved, remove it from heat and let it cool for a minute before pouring it into the blender with the tofu mixture.
  4. Blend again until everything is well combined and smooth.
  5. Pour the mixture into two serving bowls or ramekins and refrigerate for at least 2 hours or until set.
  6. Serve chilled, topped with chopped fresh fruits if desired.
