Ingredients
- Silken tofu - 200 grams
- Ripe tomatoes - 2 medium (about 300 grams total)
- Cucumber - 1 small (about 100 grams)
- Fresh cilantro - 2 tablespoons, chopped
- Green onion - 2 tablespoons, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Red pepper flakes - 1 teaspoon (optional)
- Salt - to taste
Steps
- Start by draining the silken tofu and gently patting it dry with a paper towel. Cut it into 1-inch cubes and set aside.
- Wash and chop the ripe tomatoes into bite-sized pieces. If using, remove the seeds for a less watery salad.
- Peel the cucumber and slice it thinly. You can also cut it into half-moons for a different presentation.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, and red pepper flakes (if using) to create the dressing.
- In a large bowl, combine the tofu, tomatoes, cucumber, chopped cilantro, and sliced green onion.
- Drizzle the dressing over the salad and gently toss to combine, being careful not to break the tofu.
- Taste and adjust salt as needed.
- Chill the salad in the refrigerator for at least 10 minutes before serving to allow the flavors to meld.
