- Red bell pepper - 1 medium, thinly sliced
- Green onions - 3, chopped
- Fresh cilantro - 20 grams, chopped
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Szechuan peppercorns - 1 teaspoon, crushed
- Rice vinegar - 1 tablespoon
- Honey - 1 teaspoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, minced
- Peanuts - 30 grams, crushed (for garnish)
Steps
- Cook the soba noodles according to package instructions, then drain and rinse under cold water to cool down.
- In a large mixing bowl, combine the sesame oil, soy sauce, Szechuan peppercorns, rice vinegar, honey, garlic, and ginger to make the dressing.
- Add the cooled soba noodles, shredded chicken, cucumber, carrot, red bell pepper, green onions, and cilantro to the bowl with the dressing.
- Toss everything together until well combined and evenly coated in the dressing.
- Chill in the refrigerator for at least 10 minutes before serving.
- Serve garnished with crushed peanuts on top.
