  • Soba noodles - 200 grams
  • Shredded cooked chicken breast - 150 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Green onions - 3, chopped
  • Fresh cilantro - 20 grams, chopped
  • Sesame oil - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Szechuan peppercorns - 1 teaspoon, crushed
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, minced
  • Peanuts - 30 grams, crushed (for garnish)

Steps

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water to cool down.
  2. In a large mixing bowl, combine the sesame oil, soy sauce, Szechuan peppercorns, rice vinegar, honey, garlic, and ginger to make the dressing.
  3. Add the cooled soba noodles, shredded chicken, cucumber, carrot, red bell pepper, green onions, and cilantro to the bowl with the dressing.
  4. Toss everything together until well combined and evenly coated in the dressing.
  5. Chill in the refrigerator for at least 10 minutes before serving.
  6. Serve garnished with crushed peanuts on top.
