- Shrimp (peeled and deveined) - 200 grams
- Cucumber (thinly sliced) - 1 medium
- Red bell pepper (diced) - 1/2
- Carrot (julienned) - 1 medium
- Red onion (thinly sliced) - 1/4
- Fresh cilantro (chopped) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Honey - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Ice water - for chilling
Steps
- Bring a pot of water to a boil and add the shrimp. Cook for 2-3 minutes until they turn pink and opaque.
- Drain the shrimp and immediately transfer them to a bowl of ice water to stop the cooking process. Let them chill for about 5 minutes.
- In a large bowl, combine the cucumber, red bell pepper, carrot, red onion, and cilantro.
- In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, salt, and black pepper to create the dressing.
- Once the shrimp are chilled, drain them and add to the bowl of vegetables.
