Ingredients

  • Shrimp (peeled and deveined) - 200 grams

  • Carrot (julienned) - 1 medium
  • Red onion (thinly sliced) - 1/4
  • Fresh cilantro (chopped) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Ice water - for chilling

Steps

  1. Bring a pot of water to a boil and add the shrimp. Cook for 2-3 minutes until they turn pink and opaque.
  2. Drain the shrimp and immediately transfer them to a bowl of ice water to stop the cooking process. Let them chill for about 5 minutes.
  3. In a large bowl, combine the cucumber, red bell pepper, carrot, red onion, and cilantro.
  4. In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, salt, and black pepper to create the dressing.
  5. Once the shrimp are chilled, drain them and add to the bowl of vegetables.
