Ingredients

  • Mango - 1 large, diced
  • Sago pearls - 50 grams
  • Coconut milk - 200 ml
  • Greek yogurt - 100 grams
  • Honey - 2 tablespoons
  • Water - 500 ml
  • Chia seeds - 1 tablespoon
  • Mint leaves - for garnish

Steps

  1. In a pot, bring 500 ml of water to a boil and add the sago pearls. Cook for about 10-15 minutes, stirring occasionally, until the pearls become transparent.
  2. Once cooked, drain the sago pearls and rinse them under cold water to remove excess starch. Set aside.
  3. In a mixing bowl, combine the coconut milk, Greek yogurt, and honey. Whisk until smooth and well combined.
  4. Fold the cooked sago pearls into the coconut milk mixture and mix gently.
  5. Add the diced mango to the mixture and stir to combine.
  6. Chill the mixture in the refrigerator for at least 1 hour before serving.
  7. Serve in bowls, garnished with chia seeds and mint leaves.
