Ingredients

  • Lotus root - 200 grams, peeled and sliced thinly
  • Cucumber - 100 grams, julienned
  • Carrot - 50 grams, julienned
  • Red bell pepper - 50 grams, thinly sliced
  • Fresh cilantro - 10 grams, chopped
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Chili oil - 1 teaspoon (optional)
  • Salt - to taste
  • Sugar - 1 teaspoon
  • Roasted sesame seeds - 1 tablespoon

Steps

  1. Prepare the lotus root by slicing it thinly and soaking it in a bowl of water mixed with a splash of vinegar to prevent browning.
  2. Bring a pot of water to a boil and add a pinch of salt. Blanch the lotus root slices for 3-4 minutes until tender but still crunchy. Drain and cool under cold running water, then set aside.
  3. In a large bowl, combine the blanched lotus root, cucumber, carrot, red bell pepper, and cilantro.
  4. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, chili oil (if using), salt, and sugar until well combined.
  5. Pour the dressing over the salad and toss gently to combine all ingredients thoroughly.
  6. Chill the salad in the refrigerator for at least 15 minutes before serving.
  7. Before serving, sprinkle the roasted sesame seeds on top for added crunch.
