Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Cauliflower (riced) - 300 grams
  • Garlic (minced) - 4 cloves
  • Fresh red chili (sliced) - 1
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions (sliced) - 2
  • Ginger (grated) - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Add the sliced chili and shrimp to the skillet, cooking for 3-4 minutes until the shrimp turns pink.
  4. Stir in the soy sauce and sesame oil, cooking for an additional 2 minutes.
  5. In a separate pan, add a little olive oil and sauté the riced cauliflower for about 5-7 minutes until tender.
  6. Season the cauliflower rice with salt and black pepper to taste.
  7. Serve the chili garlic shrimp over the cauliflower rice, garnished with sliced green onions.
