- Oyster sauce (vegetarian) - 1 tablespoon
- Sugar - 1 teaspoon
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Baby spinach - 100 grams
- Spring onions - 2, chopped
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Cook the chow mein noodles according to package instructions, drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat.
- Add the minced garlic and red chili flakes to the pan, sautéing for about 30 seconds until fragrant.
- Stir in the julienned carrot and sliced bell pepper, cooking for an additional 2-3 minutes until slightly softened.
- Add the cooked noodles to the pan, then pour in the soy sauce, oyster sauce, and sugar. Toss everything well to combine and heat through for about 2-3 minutes.
- Fold in the baby spinach and chopped spring onions, cooking until the spinach wilts, about 1 minute.
- Serve hot, garnished with sesame seeds.
