  • Chow mein noodles - 200 grams

  • Garlic - 6 cloves, minced
  • Red chili flakes - 1 teaspoon
  • Soy sauce - 3 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Baby spinach - 100 grams
  • Spring onions - 2, chopped
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Cook the chow mein noodles according to package instructions, drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and red chili flakes to the pan, sautéing for about 30 seconds until fragrant.
  4. Stir in the julienned carrot and sliced bell pepper, cooking for an additional 2-3 minutes until slightly softened.
  5. Add the cooked noodles to the pan, then pour in the soy sauce, oyster sauce, and sugar. Toss everything well to combine and heat through for about 2-3 minutes.
  6. Fold in the baby spinach and chopped spring onions, cooking until the spinach wilts, about 1 minute.
  7. Serve hot, garnished with sesame seeds.
