Ingredients

  • Crab meat - 200 grams
  • Zucchini noodles - 200 grams
  • Coconut aminos - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Red chili - 1, finely chopped
  • Bell pepper - 1/2, sliced
  • Green onions - 2, chopped
  • Cilantro - 1/4 cup, chopped
  • Coconut oil - 2 tablespoons
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add minced garlic, grated ginger, and chopped red chili to the skillet, sauté for 1-2 minutes until fragrant.
  3. Stir in the sliced bell pepper and cook for another 3-4 minutes until slightly softened.
  4. Add the crab meat and coconut aminos to the skillet, gently folding to combine and heat the crab through for about 3-5 minutes.
  5. In a separate pot, bring water to a boil and add the zucchini noodles; cook for 2-3 minutes until just tender, then drain and set aside.
  6. Add the cooked zucchini noodles to the skillet with the crab mixture, tossing everything together.
  7. Remove from heat, squeeze lime juice over the top, and season with salt to taste.
  8. Garnish with chopped green onions and cilantro before serving.
