- Chickpea flour - 100g
- Water - 250ml
- Salt - 1/2 tsp
- Turmeric powder - 1/2 tsp
- Black pepper - 1/4 tsp
- Vegetable oil - 2 tbsp
- Green onion - 2, finely chopped
- Carrot - 1 small, grated
- Cucumber - 1/2, julienned
- Fresh cilantro - a handful, chopped
- Soy sauce - 2 tbsp
- Chili sauce - to taste
- Sesame oil - 1 tsp (optional)
Steps
- In a mixing bowl, combine chickpea flour, water, salt, turmeric, and black pepper to form a smooth batter. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
- Pour half of the batter into the skillet, swirling to form a thin pancake. Cook for 2-3 minutes until the bottom is golden and set.
- Sprinkle half of the chopped green onion, grated carrot, and cilantro on top of the pancake. Cook for another minute.
- Carefully flip the pancake and cook for an additional 1-2 minutes until the other side is golden.
- Transfer the pancake to a plate and repeat the process with the remaining batter and vegetables.
- Once all pancakes are cooked, assemble the Jianbing by spreading soy sauce and chili sauce on each pancake, adding julienned cucumber and more fresh cilantro if desired.
- Fold the pancakes in half and serve warm, drizzled with sesame oil if using.
