Ingredients

  • Chickpea flour - 100g
  • Water - 250ml
  • Salt - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Vegetable oil - 2 tbsp
  • Green onion - 2, finely chopped
  • Carrot - 1 small, grated
  • Cucumber - 1/2, julienned
  • Fresh cilantro - a handful, chopped
  • Soy sauce - 2 tbsp
  • Chili sauce - to taste
  • Sesame oil - 1 tsp (optional)

Steps

  1. In a mixing bowl, combine chickpea flour, water, salt, turmeric, and black pepper to form a smooth batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  3. Pour half of the batter into the skillet, swirling to form a thin pancake. Cook for 2-3 minutes until the bottom is golden and set.
  4. Sprinkle half of the chopped green onion, grated carrot, and cilantro on top of the pancake. Cook for another minute.
  5. Carefully flip the pancake and cook for an additional 1-2 minutes until the other side is golden.
  6. Transfer the pancake to a plate and repeat the process with the remaining batter and vegetables.
  7. Once all pancakes are cooked, assemble the Jianbing by spreading soy sauce and chili sauce on each pancake, adding julienned cucumber and more fresh cilantro if desired.
  8. Fold the pancakes in half and serve warm, drizzled with sesame oil if using.
