Chickpea Fritters

These Vegan Chinese Chickpea Fritters are crispy on the outside and soft on the inside, infused with aromatic spices that give them a delightful flavor. Perfect as a snack or appetizer, they are both nutritious and satisfying.

Ingredients

  • Chickpeas - 200 grams (cooked and drained)
  • Cornstarch - 30 grams
  • Green onions - 2 stalks (finely chopped)
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cilantro - 2 tablespoons (chopped)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 50 ml
  • Oil - for frying (about 200 ml)

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cornstarch, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, chopped cilantro, salt, black pepper, and water to the mashed chickpeas. Mix well until combined.
  3. Heat oil in a frying pan over medium heat. Once hot, take about a tablespoon of the chickpea mixture and form it into small fritters (about 5 cm in diameter).
  4. Carefully place the fritters into the hot oil, leaving space between each one. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the oil and place them on paper towels to drain excess oil.
  6. Serve the chickpea fritters warm with a dipping sauce of your choice.
