Chickpea Fritters
These Vegan Chinese Chickpea Fritters are crispy on the outside and soft on the inside, infused with aromatic spices that give them a delightful flavor. Perfect as a snack or appetizer, they are both nutritious and satisfying.

Ingredients
- Chickpeas - 200 grams (cooked and drained)
- Cornstarch - 30 grams
- Green onions - 2 stalks (finely chopped)
- Garlic - 2 cloves (minced)
- Ginger - 1 teaspoon (grated)
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cilantro - 2 tablespoons (chopped)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 50 ml
- Oil - for frying (about 200 ml)
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cornstarch, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, chopped cilantro, salt, black pepper, and water to the mashed chickpeas. Mix well until combined.
- Heat oil in a frying pan over medium heat. Once hot, take about a tablespoon of the chickpea mixture and form it into small fritters (about 5 cm in diameter).
- Carefully place the fritters into the hot oil, leaving space between each one. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the oil and place them on paper towels to drain excess oil.
- Serve the chickpea fritters warm with a dipping sauce of your choice.
