- Fresh spinach - 150 grams, washed and chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable broth - 100 ml
- Red bell pepper - 1 medium, sliced
- Green onions - 2 stalks, chopped
- Black sesame seeds - 1 teaspoon, for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Heat sesame oil in a large skillet or wok over medium heat.
- Add minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
- Stir in the sliced red bell pepper and cook for another 2-3 minutes until slightly softened.
- Add the drained chickpeas and vegetable broth to the skillet, stirring well to combine. Cook for 5 minutes, allowing the mixture to simmer.
- Add the chopped spinach and soy sauce, stirring until the spinach wilts down, about 2-3 minutes.
