Ingredients

  • Canned chickpeas - 240 grams, drained and rinsed
  • Fresh spinach - 150 grams, washed and chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Red bell pepper - 1 medium, sliced
  • Green onions - 2 stalks, chopped
  • Black sesame seeds - 1 teaspoon, for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
  3. Stir in the sliced red bell pepper and cook for another 2-3 minutes until slightly softened.
  4. Add the drained chickpeas and vegetable broth to the skillet, stirring well to combine. Cook for 5 minutes, allowing the mixture to simmer.
  5. Add the chopped spinach and soy sauce, stirring until the spinach wilts down, about 2-3 minutes.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and garnish with chopped green onions and black sesame seeds before serving.
