Ingredients

  • Chicken breast - 250 grams, thinly sliced
  • Green beans - 200 grams, trimmed
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Spring onions - 2, chopped (for garnish)

Steps

  1. In a bowl, mix the sliced chicken with soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for about 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the trimmed green beans to the skillet and stir-fry for about 3-4 minutes until they are bright green and slightly tender.
  5. Return the cooked chicken to the skillet with the green beans. Drizzle with sesame oil and toss everything together to combine. Cook for an additional 2 minutes.
  6. Taste and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with chopped spring onions.
