Ingredients

  • Chicken breast - 300 grams, sliced into thin strips
  • Cashews - 100 grams, unsalted
  • Bell pepper - 1 medium, sliced (any color)
  • Broccoli - 150 grams, cut into small florets
  • Carrot - 1 medium, julienned
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped for garnish

Steps

  1. In a bowl, toss the sliced chicken breast with cornstarch and 1 tablespoon of soy sauce. Let it marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic, ginger, bell pepper, broccoli, and carrot, and stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the pan, add the cashews, remaining soy sauce, and oyster sauce. Stir well to combine and cook for an additional 2-3 minutes.
  5. Drizzle with sesame oil and toss everything together. Remove from heat and garnish with chopped green onions before serving.
