  • Broccoli florets - 100 grams
  • Carrots - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions - 2, chopped (for garnish)

Steps

  1. In a bowl, mix diced chicken with cornstarch, soy sauce, and a pinch of salt and black pepper. Let it marinate for 10 minutes.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

  4. Return the cooked chicken to the pan with the vegetables. Add oyster sauce and sesame oil, stirring well to combine all ingredients. Cook for another 2-3 minutes to heat through.
  5. Add roasted cashew nuts and mix well. Taste and adjust seasoning with salt and pepper as needed.
  6. Serve hot, garnished with chopped spring onions.
