Ingredients

  • Chicken breast - 200 grams, boneless and skinless, cut into bite-sized pieces
  • Chicken stock - 500 ml, preferably low-sodium
  • Water - 250 ml
  • Fresh ginger - 10 grams, sliced thinly
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Celery - 1 stalk, diced
  • Shiitake mushrooms - 50 grams, sliced
  • Green onions - 2, chopped
  • Soy sauce - 1 tablespoon, kosher-certified
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish (optional)

Steps

  1. In a large pot, combine the chicken stock and water, and bring to a simmer over medium heat.
  2. Add the sliced ginger, minced garlic, carrot, and celery to the pot, and let simmer for 5 minutes.
  3. Add the chicken pieces to the pot and cook for about 10 minutes, or until the chicken is fully cooked and tender.
  4. Stir in the shiitake mushrooms, soy sauce, and sesame oil. Continue to simmer for another 5 minutes.
  5. Season with salt and black pepper to taste. Remove from heat.
  6. Ladle the soup into bowls and garnish with chopped green onions and fresh cilantro if desired.
