- Chicken breast - 200 grams, boneless and skinless, cut into bite-sized pieces
- Chicken stock - 500 ml, preferably low-sodium
- Water - 250 ml
- Fresh ginger - 10 grams, sliced thinly
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Celery - 1 stalk, diced
- Shiitake mushrooms - 50 grams, sliced
- Green onions - 2, chopped
- Soy sauce - 1 tablespoon, kosher-certified
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish (optional)
Steps
- In a large pot, combine the chicken stock and water, and bring to a simmer over medium heat.
- Add the sliced ginger, minced garlic, carrot, and celery to the pot, and let simmer for 5 minutes.
- Add the chicken pieces to the pot and cook for about 10 minutes, or until the chicken is fully cooked and tender.
- Stir in the shiitake mushrooms, soy sauce, and sesame oil. Continue to simmer for another 5 minutes.
- Season with salt and black pepper to taste. Remove from heat.
- Ladle the soup into bowls and garnish with chopped green onions and fresh cilantro if desired.
