  • Soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Ground coriander - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Peanut butter - 3 tablespoons
  • Coconut milk - 100 ml
  • Chili sauce - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a mixing bowl, combine soy sauce, honey, minced garlic, grated ginger, ground coriander, cumin, turmeric, and lemon juice to create the marinade.
  2. Add chicken strips to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes.
  3. While the chicken marinates, prepare the peanut sauce by whisking together peanut butter, coconut milk, and chili sauce in a small saucepan over low heat. Stir until smooth and warm, then season with salt and pepper to taste.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated chicken strips onto the skewers.
  6. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  7. Serve the grilled chicken satay hot with the peanut sauce on the side for dipping.
